Lemon Pudding

LEMON PUDDING / budinca de lamaie


INGREDIENTS :


          • 2 lemons ( or oranges ) 
            • 4 eggs 
            • 200 g sugar
            • 200 g white flour 
            • 1 g salt 

     Firstly you have to peel the lemons  and squeeze the juice .





    Separate the eggs (put the egg white in  the fridge because its better to mix them cold)
    and mix the yolk with :




    150 g  of sugar


     lemon skin 


     1/2 the lemon juice


     *also you can add 50 g of raisins or washed & chopped candied fruits











    Take the egg white from the fridge and mix them with 1 g of salt and the rest of the sugar ( 50 g)  until you get a thick composition .










    When it`s done you can add the yolks , rest of the lemon juice and mix with a wooden spoon from top to bottom ( the egg white will keep their structure ). When it`s homogenized you can graddually add the flour and keep mixing from top to bottom. 









    After you are done mixing , grease a pan with butter and cover it with baking paper, place the composition in the pan and bake it for 30 minutes in a preheated oven . ( the temperatures depends on the oven , 100 - 150 C )  













    Take a look from time to time  so it won`t get burn. When it`s done take it out from the oven  ( use a oven glove ) and let it get cold.*Add some powdered sugar on top and some fruits or syrup.  















    And....  




    ...Voila !!....
