Cheesecake cu afine ( tort )
Instead of blueberry you can use any other fruit such as : blackberry,pineapple,strawberry, raspberry,cherry, etc .
Ingredients :
1. Crust :
Mix the biscuits with sugar and the melted butter.

Place the crust in a round pan and press it with a spoon.Put it in the oven for 15-20 minutes until it gets a ligthly brown colour.Take it out and let the crust cool for ~ 2 hours.
2. Cream :
- 600 g mascarpone cheese or any similar soft cream cheese ( Hochland classic,Philadelphia)
- 200 g sugar
- 3 eggs
- 2 spoons of lemon juice
- vanilla
- 1/4 teaspoon of salt
In a bowl add the cheese , sugar and mix with the kitchen mixer, then add the eggs , lemon juice, vanilla . salt and stir again. Place the composition on top of the cold crust then back to the oven for 30 minutes or until you notice that the centre is almost set. Let it cool.
3. Blueberry Top :
Gelatin : * mix the gelatin(10 g) with 2 spoons of sugar and 250 ml of water and let it boil for 1 minute*
Add the blueberries on top of the cake , then pour the gelatin over them .
If you are using blueberry compote , you can hold them toghether with amidine. Boil the compote with a spoon of amidine until it gets thick. Pour the composition on top of the cake .
Put the cake in the fridge for at least 1 hour . Serve !
* i used half of the cream composition, thats why in the pictures the crust is bigger than the cream*
